My name is Dario Cecchini and I am a butcher from eight generations, from father to son.

For me, a man must be like a tree: his roots in the earth and his crown in the sky. That is, he must have his feet firmly planted in tradition, to take nourishment from it, and his head in the contemporary, free to create with responsibility and common sense.I try to keep the value of my work and the tradition of my family high, trying to improve myself in my art and trying to achieve the perfect cut and cooking for every piece of meat. It is my way of respecting the animal, it's life, it's death, using everything down to the last tendon with responsibility. This is what I have done every day for more than 48 years: I am a butcher from nose to tail.
